1 ½ cups diced tomatoes
1/2 cup diced green peppers
1/2 cup chopped scallions (green

1 tablespoon cider vinegar
1 tablespoon olive oil
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon salt

board to dice tomatoes and green peppers into very small
cube shapes. (Warning: Have children wash their hands
after handling peppers; and make sure they avoid touching
their faces until they do so.)
2 Chop the scallions, measure, and then mix with the
tomatoes and green peppers.
3 Combine garlic, vinegar, olive oil, oregano, and parsley in a
mixing bowl. Add the chopped vegetables to the bowl and
mix well. Add salt to taste if desired.
4 Refrigerate before serving. (Hint: The longer the salsa is
chilled, the more the vegetable flavors will blend and the
juicier it will become.)
5 Serve with tortilla chips.
6 Refrigerate leftovers for another tasty snack.
Extension Sweet peppers come in a variety of different colors. Do a taste
test of each colored pepper. Chart the responses or favorites.
